Cheese with a typical sheep’s aroma, ripened in a controlled environment. Moderately strong flavor, given by the prolonged ripening and by the liner made in the crust with an oil and pepper paste, presenting in its interior a hard and pale yellow paste with few or no eye and hard crust of orange-brown hue.
- Raw sheep’s milk, salt, thistle
Fat content from 45% to 60%.
Wrapped in greaseproof paper (if individually
packed), cardboard boxes and plastic crates.
